Easy Quick Pickled Vegetables

Rest Time: 30 minutes (best after 24 hours)
Makes: 1 quart jar
Ingredients
Vegetables
* 1 cup sliced cucumbers
* 1 cup sliced carrots
* 1 cup sliced red onion
* 1 cup sliced radishes
* 1 jalapeño, sliced (optional)
* 3 garlic cloves, peeled and lightly smashed
* 2–3 sprigs fresh dill
Pickling Brine
* 1 cup white vinegar
* 1 cup water
* 2 tablespoons brown sugar
* 1 tablespoon kosher salt
* 1 teaspoon whole black peppercorns
* 1 teaspoon mustard seeds
* ½ teaspoon red pepper flakes (optional)
Instructions
1. Wash and slice all vegetables into uniform pieces.
2. Pack the vegetables, garlic, and fresh dill tightly into a clean quart-size mason jar.
3. In a small saucepan, combine the vinegar, water, brown sugar, kosher salt, peppercorns, mustard seeds, and red pepper flakes.
4. Bring the mixture to a gentle simmer, stirring until the sugar and salt have dissolved.
5. Carefully pour the warm brine over the vegetables, making sure they are completely covered.
6. Let the jar cool to room temperature.
7. Seal with a lid and refrigerate for at least 30 minutes before serving. For the best flavor, refrigerate overnight.
