Easy Berry Galette with Vanilla Custard
Serves: 6–8
Ingredients
Custard
* 4 oz cream cheese, softened
* ¼ cup heavy cream
* 2 tablespoons granulated sugar
* 1 teaspoon vanilla extract
Berry Filling
* 2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
* ⅓ cup granulated sugar
* 1 tablespoon cornstarch
* 1 tablespoon fresh lemon juice
* 1 teaspoon lemon zest
* 1 teaspoon vanilla extract
Galette
* 1 Pillsbury refrigerated pie crust
* 1 egg, beaten (for egg wash)
* 1 tablespoon coarse sugar (or granulated sugar)
* Powdered sugar, for garnish
* Fresh mint (optional)
Instructions
1. Preheat oven to 375°F and line a baking sheet with parchment paper.
2. In a bowl, beat together the cream cheese, heavy cream, sugar, and vanilla until smooth and creamy.
3. In a separate bowl, gently toss the berries with the sugar, cornstarch, lemon juice, lemon zest, and vanilla. Let the mixture sit for about 10 minutes.
4. Roll out the Pillsbury pie crust onto the prepared baking sheet.
5. Spread the custard into the center of the crust, leaving about a 2-inch border around the edges.
6. Spoon the berry mixture over the custard.
7. Fold the edges of the crust over the filling, overlapping as needed to create a rustic galette.
8. Brush the crust with the beaten egg and sprinkle with coarse sugar.
9. Bake for 35–40 minutes, or until the crust is golden brown and the filling is bubbling.
10. Let cool for 15–20 minutes before dusting with powdered sugar and garnishing with fresh mint.
Serve warm on its own or with a scoop of vanilla ice cream.
