Ingredients

* 1 refrigerated pie crust (or homemade pastry)
* 8 oz cream cheese, softened
* 4 oz garlic & herb goat cheese, softened
* 2–3 large golden heirloom tomatoes, sliced ¼-inch thick
* ½ cup freshly grated Parmigiano Reggiano, plus more for garnish
* 2 tbsp fresh basil, chopped
* 1 tsp fresh thyme leaves
* 1 tsp finely chopped fresh rosemary
* 1 tbsp olive oil
* Kosher salt
* Fresh cracked black pepper
For the Crust
* 1 egg
* 1 tbsp water

Instructions
1. Prepare the Tomatoes
Slice the heirloom tomatoes into ¼-inch slices. Place them on a wire rack set over a baking sheet, sprinkle both sides lightly with kosher salt, and let them drain for 20–30 minutes. Pat dry with paper towels before using.
2. Make the Filling
In a bowl, combine:
* Softened cream cheese
* Garlic & herb goat cheese
* Basil
* Thyme
* Rosemary
Mix until smooth.
3. Assemble
Preheat oven to 400°F.
Roll the pie crust onto a parchment-lined baking sheet.
Spread the cheese mixture over the center, leaving about a 2-inch border.
Arrange the tomato slices over the cheese.
Drizzle lightly with olive oil.
Season with black pepper and, if needed, a little additional salt.
Top with freshly grated Parmigiano Reggiano.
