Chai Spice Mix
* 2 tsp ground cinnamon
* 1 tsp ground ginger
* ½ tsp ground cardamom
* ¼ tsp ground cloves
* ¼ tsp ground nutmeg
* ⅛ tsp ground black pepper
Mix together and set aside.
Cookies
* 1 cup unsalted butter
* 1 cup packed light brown sugar
* ½ cup granulated sugar
* 1 large egg
* 1 large egg yolk
* 2 tsp vanilla extract
* 2¾ cups all-purpose flour
* 1 tsp baking soda
* ½ tsp baking powder
* ½ tsp kosher salt
* 2 tsp chai spice mix
Chai Sugar Coating
* ¼ cup granulated sugar
* 1½ tsp chai spice mix
Directions
1. Brown the butter.
Melt the butter in a saucepan over medium heat. Continue cooking, stirring frequently, as it foams and the milk solids begin to turn golden brown. Once it smells nutty and you see browned bits on the bottom, remove it from the heat.
Let it cool for about 15–20 minutes.
2. Make the wet mixture.
Whisk the brown sugar and granulated sugar into the browned butter. Add the egg, egg yolk and vanilla and whisk until smooth.
3. Add the dry ingredients.
In a separate bowl, combine the flour, baking soda, baking powder, salt and 2 teaspoons chai spice mix.
Add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
4. Chill.
Cover and refrigerate the dough for 90 minutes.
5. Make the chai sugar.
Combine the ¼ cup granulated sugar with 1½ teaspoons chai spice mix in a shallow bowl.
6. Scoop and roll.
Heat oven to 350°F. Scoop the chilled dough into roughly 2-tablespoon portions. Roll each into a ball and coat generously in the chai sugar.
7. Bake.
Place on a parchment-lined baking sheet about 2 inches apart. Bake for approximately 10–12 minutes, until the edges are set but the centers still look slightly soft.
8. Cool.
Let them sit on the baking sheet for about 5 minutes before transferring to a cooling rack.
