The Creamy Fall Orzo You’ll Make on Repeat 🍂

Creamy Sweet Potato, Mushroom & Spinach Orzo 🍂

This creamy one-pan orzo is packed with roasted sweet potato, mushrooms and spinach, then finished with Parmesan and a splash of cream. It’s cozy enough for fall but easy enough for a weeknight dinner. I served mine alongside roasted chicken thighs, but it’s hearty enough to stand on its own.

Ingredients

* 1 medium sweet potato, peeled and cut into ½-inch cubes

* 1 tablespoon olive oil, plus more as needed

* Salt and freshly cracked black pepper

* 8 oz mushrooms, sliced

* 1 small yellow onion, diced

* 3 cloves garlic, minced

* 5 oz fresh baby spinach

* 1½ cups dry orzo

* 3½ cups chicken or vegetable stock, plus more if needed

* ½ teaspoon dried thyme

* ½ teaspoon garlic powder

* ½ cup freshly grated Parmesan cheese, plus more for serving

* ½ cup heavy cream

* Salt and pepper to taste

Directions

1. Roast the sweet potato.

Preheat oven to 425°F. Toss the cubed sweet potato with olive oil, salt and pepper. Roast for about 20–25 minutes, turning once, until tender and lightly caramelized.

2. Start the vegetables.

Heat a large skillet or sauté pan over medium heat with a drizzle of olive oil. Add the mushrooms and cook until browned and their moisture has mostly cooked away.

3. Add the aromatics and spinach.

Add the diced onion and garlic and cook until the onion begins to soften. Add the spinach a handful at a time and stir until wilted.

4. Add the sweet potato and orzo.

Gently stir the roasted sweet potato into the vegetables. Add the dry orzo, thyme and garlic powder and stir everything together.

5. Cook the orzo.

Pour in the stock and bring to a gentle simmer. Cook uncovered, stirring frequently, until the orzo is tender and most of the liquid has been absorbed, about 10–12 minutes. Add a splash more stock if the orzo needs additional liquid before it is tender.

6. Make it creamy.

Reduce the heat to low. Stir in the freshly grated Parmesan and heavy cream until the orzo is creamy and glossy. Taste and adjust with salt and freshly cracked pepper.

7. Serve.

Spoon into bowls and finish with extra Parmesan. Serve as a cozy vegetarian main or alongside roasted chicken thighs.
