Lunch Idea -Quick Greek Couscous

just made this for lunch and was really happy with how it came out so I thought I would share!

I chopped cucumber, red onion, avocado, and grape tomatoes (my favorite are the flavor bomb grape tomatoes on the vine) while the chicken broth was coming to a boil

I cooked the couscous in chicken broth in a pot on the stove. I also added minced garlic, lemon juice, smoked paprika, garlic powder, onion powder, and the chickpeas (garbanzo beans) along with the couscous. I covered the blood and lowered the temp. then kept an eye on it while it cooked as couscous cooks very quick.

once the couscous is cooked l, remove the pot from the hot stove. I got a couple of ice cubes and mixed them in the couscous to help cool it down.

then in the bowl I was going to be eating this in, I put some Greek yogurt in, half of the couscous mix that was in the pot, my veggies, some dill weed, and feta then mixed. added salt and pepper to taste and it was done! really filling and quite tasty 😄
