Truly couldn't stop eating these!

Comparable to a PB ToosieRoll, IMO. The texture is ooey gooey with structure and bite. They are the best date balls Ive ever had! I skipped dunking them in Chocolate because they disappeared to fast! Even without the chocolate coating these are a ⭐️⭐️⭐️⭐️⭐️ star recipe!

Cannot wait to try more of Elles date ball recipes!

... Read moreOkay, so let me tell you, when I first stumbled upon Elle Gibson's brownie date balls, my life changed. Seriously! I've tried a ton of healthy snack recipes, but these are truly next level. It's not just the incredible flavor – that deep, rich, chocolatey goodness without any actual chocolate in this version – but also the texture. It’s that perfect ooey-gooey consistency with just enough bite, almost like a healthy, naturally sweetened Tootsie Roll, as I mentioned before. And the best part? They’re naturally vegan and packed with fiber, making them a guilt-free indulgence that actually keeps you feeling full and energized. Elle Gibson is a genius when it comes to creating simple, wholesome, and unbelievably delicious recipes. Her approach is all about making healthy eating accessible and enjoyable, and you can tell she puts so much love into each one. I initially found her recipes on her social media, and I'm so glad I did. She has a talent for taking basic ingredients and transforming them into something extraordinary, without requiring a ton of fancy equipment or obscure items. If you're looking for more inspiration, definitely check out her page – you won't be disappointed! Now, let's talk about the star ingredient: dates. While you can use any variety, I've found that using brown Barhi dates makes a huge difference in these brownie date balls. Barhi dates are known for their incredibly soft, caramel-like texture and rich, honey-sweet flavor. When they're ripe, they practically melt in your mouth! This sweetness and moisture really contribute to that 'brownie' like consistency and deep flavor profile that makes Elle's recipe so special. If you can get your hands on them, I highly recommend sourcing Barhi dates for this recipe – you'll taste the difference. They truly elevate the entire experience. Speaking of dates, a common question I get is about how to handle the pits. When you're dealing with a lot of dates, especially for a recipe like this, efficient date pit removal is key. I picked up a super handy trick that makes it a breeze: simply take a small paring knife and run it lengthwise along one side of the date, just deep enough to hit the pit. Then, gently pry the date open and the pit should pop right out. Another great tip, which I actually saw illustrated, is to dip your knife in water occasionally. This helps prevent the sticky date flesh from clinging to the blade, making the process much cleaner and faster. Trust me, once you get the hang of it, you'll be able to pit a whole batch of dates in no time. Plus, getting a good close-up look at the pitted dates really shows how ready they are for blending into that amazing brownie batter! Beyond the basic recipe, I've played around with these a bit. Sometimes I roll them in shredded coconut or finely chopped nuts for extra texture. They're also fantastic with a sprinkle of sea salt to balance the sweetness. They store beautifully in an airtight container in the fridge for about a week, or you can freeze them for longer. They make the perfect grab-and-go snack, pre-workout boost, or even a mini dessert. Honestly, these Elle Gibson brownie balls are a staple in my kitchen now, and I hope they become one in yours too!
