I made them last night, and they were such a hit. It's one of those meals that feels special but comes together in a flash, making it perfect for any night of the week. So, what exactly are shrimp fajitas? Imagine perfectly seasoned, succulent shrimp sizzling alongside colorful bell peppers and tender onions, all wrapped up in a warm tortilla. It's a classic Mexican-inspired dish, and the best part is how customizable it is! The aroma alone as everything cooks is enough to get your mouth watering. I love shrimp fajitas because they're not just tasty; they're also a fantastic option for a lighter, protein-packed meal. Plus, they’re so quick to cook – shrimp takes hardly any time at all, so you can have dinner on the table in about 30 minutes, sometimes even less if you’re speedy with your chopping! This totally fits into my meal prep ideas for the week, as I can chop the veggies ahead of time. Here's my simple approach to making them: First, you'll want to get your shrimp ready. If you're using frozen shrimp, make sure to thaw them well and pat them dry. This helps them get a nice sear. I usually toss them with a little olive oil and a generous amount of fajita seasoning. You can buy pre-made seasoning, or whip up your own with chili powder, cumin, paprika, garlic powder, onion powder, and a pinch of cayenne for a kick. Let them marinate for at least 10-15 minutes while you prep your veggies. Next up, the veggies! I love using a mix of bell peppers – red, yellow, and green – along with some sliced onion. My go-to's include fresh salsa, creamy guacamole or sliced avocado, a dollop of sour cream or Greek yogurt for a lighter option, a sprinkle of fresh cilantro, and plenty of lime wedges for squeezing. Sometimes I even make a side of Mexican rice to go with it, which makes it a full feast! It’s also super easy to prep ingredients for these ahead of time, making weekday dinners a breeze. Just chop your veggies and mix your seasoning, and you're halfway there! If you're not a fan of shrimp, or just want to try something different, you can easily swap it out for chicken or steak.
