Homemade Egg white Bites

2 cups of Egg whites

1/2 cup of fat free cottage cheese

1/2 cup of sharp cheddar cheese

Toppings of your choice:

Mine had sweet bell peppers and Canadian bacon.

Preheat the oven to 350°F and grease a nonstick muffin tin with olive oil.

In a blender, place the egg whites and cottage cheese, salt and pepper. Blend until smooth.

Pour egg mixture over your choice of topping in each well. Divide any remaining egg mixture evenly among the wells. Evenly sprinkle the reserved 1/2 cup sharp cheddar cheese on top.

Bake for 30 to 35 minutes, or until the eggs are set. Let cool for 5 minutes before removing from the pan.

Makes 12 egg bites. Note: For best results, use a non-stick pan that has a very slick new-ish nonstick finish. Alternatively, you can use a silicone muffin pan.
