Lunch I made for my toddler 🍔
I made him these little burgers on a Hawaiian mini sub roll, I caramelized some chopped onions & mushrooms, added in my ground meat & seasoned with salt, pepper, onion powder, garlic powder, paprika.
On the sub rolls I added animal style spread sauce on both sides, cheese slices, and my ground meat.
I spread some butter on the top buns and put it in the oven on 400 for 5 mins.
I did end up cutting it to square pieces since it is easier for him to eat it that way. He has little hands.

Building on the idea of easy, kid-friendly meals, these mini burgers are surprisingly versatile if you're thinking about school lunches! While my recipe was for a cozy home lunch, with a few tweaks, you can definitely pack something similar for school. Imagine wrapping these Hawaiian roll sliders in parchment paper or placing them in a bento box with some fruit and veggies – instant school lunch success! The small size is perfect for little hands to manage at the lunch table, and they're usually a hit because, well, who doesn't love a burger? When I'm brainstorming school lunch ideas, I always think about what stays fresh, what's easy to eat, and what my little one will actually finish. That's why mini sliders are great – no soggy bread if you pack the components separately or assemble them right before packing. You could even use a thermos for the warm patties if your school allows, keeping them toasty until lunchtime. I often find that focusing on 'finger foods' makes lunch more appealing for kids, and these fit the bill perfectly. Beyond these delightful mini burgers, I'm always on the lookout for other 'sandwich-like' options that are a step up from the usual PB&J. Sometimes, I'll make a 'deconstructed' sandwich with cheese, deli meat, and crackers, letting my kid build their own. Or, for something a bit heartier that still feels special, I've seen some amazing ideas for pulled pork sliders or even chicken salad mini croissant sandwiches. These are all fantastic ways to keep school lunches exciting and ensure kids get a balanced meal. Speaking of unique sandwich ideas, I've come across parents who get really creative with 'rib-style' sandwiches for school. Now, I'm not talking about a full rack of ribs, but rather using slow-cooked, shredded meat (like pork or beef) tossed in a kid-friendly BBQ sauce, and then serving it on mini buns or even in a pita. It offers that satisfying, savory flavor profile without being messy or difficult to eat when they're away from home. It's all about making lunch an adventure, not a chore! Another tip for school lunches, whether it's mini burgers or a creative sandwich, is to involve your child in the process. Letting them choose some of the sides or even help assemble their meal makes them more likely to eat it. And don't forget a little treat or a fun note! It makes lunchtime feel a bit more special. Ultimately, the goal is nutritious, delicious food that they'll enjoy, making school days a little brighter.
