INGREDIENTS

* 1 tbsp oil

* 1 small onion, diced

* 3 cloves garlic, minced

* 2 chicken breasts (or rotisserie chicken)

* Salt, to taste

* Black pepper, to taste

* 1 tsp paprika

* 1 tsp cumin

* 1 tsp chili powder

* 1 tsp chicken bouillon powder

* 1 tbsp McCormick Garlic & Onion seasoning

* 1 can (10 oz) Rotel tomatoes

* 4 cups chicken broth

* 1 can corn, drained

* 6–8 corn tortillas, cut into strips

* 4 oz cream cheese

* 1 cup evaporated milk or heavy cream

* 1 cup shredded cheddar cheese

TOPPINGS

* Tortilla strips

* Avocado

* Lime wedges

* Cilantro

* Jalapeños

* Sour cream

* Extra cheese

STEP-BY-STEP

1. SAUTÉ

Heat oil in a large pot over medium heat.

Cook onion and garlic until soft and fragrant.

2. COOK THE CHICKEN

Add chicken breasts.

Season with salt, black pepper, paprika, cumin, chili powder, chicken bouillon powder, and McCormick Garlic & Onion seasoning.

Cook for a few minutes on each side.

3. ADD THE SOUP BASE

Pour in:

* Rotel tomatoes

7. FINAL SIMMER

Simmer for another 5 minutes.
