Homemade L. Reuteri Yogurt Bowl with Bacon

This is my lazy, protein packed breakfast. I slapped the bacon in the air fryer for about 12 minutes.

I keep this probiotic, L. Reuteri yogurt (for overall gut health) in my refrigerator. I use half and half and yogurt whey from a previous batch that I made (or you can get Greek yogurt from the store and use a tablespoon or 2 of that) and let it do its thing in a instant pot for 36 hours. Yes, 36 hours! Just set it and forget it!

I use any granola with chocolate in it (I try to use grain free granola but it’s not as good as this one).

Then I top all off with honey and pinch of salt. DELICIOUS!

I call it lazy breakfast because it takes no time to throw together and I’m too lazy to use real dishes to eat from. I eat it just like this😊

... Read moreI've been absolutely loving the savory yogurt bowl trend for breakfast lately, and it's completely changed my morning routine! If you're like me and sometimes get tired of overly sweet breakfast options, a savory protein yogurt bowl is an absolute game-changer. It's not just delicious; it's incredibly versatile, packed with goodness, and can really set you up for a productive day. First off, let's talk about the base. While I'm a huge fan of making my own homemade L. Reuteri yogurt for that extra gut-healthy boost, you absolutely don't have to. A good quality plain Greek yogurt from the store works wonderfully. Look for one with live and active cultures for those probiotic benefits. The thick, creamy texture of Greek yogurt is perfect for holding up to savory toppings, and it's a fantastic source of protein, keeping you feeling full and satisfied until lunch. Now for the fun part: toppings! My favorite way to make a healthy savory yogurt breakfast bowl truly special is by getting creative with what I add. Beyond the fantastic crispy air-fried bacon that adds a salty crunch (seriously, it's a must-try!), there's a whole world of possibilities. For more protein, think about a perfectly soft-boiled or fried egg nestled on top, or even some flaked smoked salmon. Crumbled feta or goat cheese can add a lovely tangy saltiness. If you want a plant-based protein boost, a handful of seasoned chickpeas or lentils works surprisingly well. Veggies are also incredibly welcome here. I love adding roasted cherry tomatoes, sautĆ©ed spinach, or thinly sliced cucumber and radish for freshness. A few slices of creamy avocado also add healthy fats and a gorgeous texture. Don't forget fresh herbs like dill, chives, or parsley to brighten everything up. And for an extra layer of flavor and crunch, a sprinkle of everything bagel seasoning or a dash of za'atar is pure magic. You might be wondering about the granola and honey I sometimes include. Even in a savory bowl, a tiny drizzle of honey or a sprinkle of a less-sweet granola can create an incredible sweet-and-savory contrast that elevates the dish. It's all about balancing those flavors. The beauty of a savory protein yogurt bowl is how adaptable it is. You can literally throw together whatever you have in your fridge. It's the ultimate LAZY BREAKFAST that looks and tastes gourmet. I often prep some toppings like roasted veggies or cook a batch of bacon at the beginning of the week, so assembling my bowl in the morning takes less than five minutes. It’s perfect for those busy weekdays when you still want something substantial and healthy. So, if you're looking for a new breakfast obsession that's healthy, high in protein, great for your gut, and incredibly easy to make, give the savory yogurt bowl a try. Experiment with different yogurts and toppings – you might just find your new favorite morning meal!
