Cajun Chicken and Rice

Ingredients
4 boneless skinless chicken thighs
1 tbsp Cajun seasoning
2 tsp smoked paprika
1 tsp dried oregano
1 tsp black pepper
1 tbsp olive oil
2 tbsp oil (for the pan)
1 medium onion, diced ½ red bell pepper, diced ½ green bell pepper, diced 1 celery stalk, diced
1 Roma tomato, diced
1-2 tsp Creole seasoning
1 tbsp tomato paste
4 cloves garlic, minced
2 cups jasmine rice
4 cups chicken broth
1 tsp adobo
¼ tsp cayenne pepper
2 bay leaves
4 sprigs thyme
Directions
1 Pat chicken dry and season with olive oil, Cajun seasoning, paprika, oregano, and black pepper.
2 Heat oil in a deep pan over medium-high heat. Sear chicken until browned, then remove.
3 Sauté onion, bell peppers, celery, and tomato until softened.
4 Stir in Creole seasoning and tomato paste, cook 1-2 minutes.
5 Add garlic and cook for 30 seconds.
6 Stir in rice and toast for 1 minute.
Z Pour in broth, add adobo, cayenne, bay leaves, and thyme.
8 Add chicken back on top of the rice.
9 Cover and simmer on low 25-30 minutes, until rice is tender and liquid is absorbed.
1O Rest 5 minutes, remove herbs, fluff, and serve.
Also, you have to eat your vegetables. Asparagus was my choice.
