Chicken Fajita Sliders

Ingredients
- 1.5lbs boneless skinless chicken breast, thinly sliced
- 1 medium yellow onion, sliced
- 3 bell peppers, sliced (mixed colors)
- 2 tbsp tomato paste
- 2 tsp roasted garlic powder
- 1 tsp chicken bouillon powder
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp red chili flakes
- Salt and pepper to taste
- Avocado oil for searing
- Pepper jack cheese slices
- Mozzarella, shredded
- Brioche buns
- Fresh cilantro
Garlic butter
- 1/4 cup unsalted butter, melted
- 2 tbsp parsley, chopped
- 1 heaping tsp garlic powder
- Salt to taste
Instructions
- In a bowl, combine the sliced chicken with a drizzle of oil, salt, pepper, roasted garlic powder, bouillon, paprika, cumin, chili powder, and chill flakes.
- Top with shredded mozzarella and place the top buns over everything.
- Mix together the melted butter, parsley, garlic powder, and salt.
- Brush over the tops of the buns.
- Cover with aluminum foil and bake at
375°F (190°C) until the cheese is melted about 15-20 minutes. Uncover and bake for additional 5-8 minutes or until golden brown and slightly crisp
- Brush with more garlic butter and serve!
