Recipe Below (makes 12 muffins):
• 2 cups all-purpose flour
• 1 cup sugar (or ¾ cup for less sweet)
• 2 tsp baking powder
• 1 ½ tsp cinnamon
• ½ tsp salt
• 2 large eggs
• ½ cup vegetable oil (or melted butter)
• ½ cup milk (or buttermilk)
• 1 ½ tsp vanilla extract
• 2 medium apples, peeled & diced small
• 1 tbsp butter (for sautéing apples)
• 1–2 tbsp sugar (for sautéing apples, optional)
Optional topping:
• 2 tbsp sugar + ½ tsp cinnamon
Instructions:
1️⃣ Preheat oven to 375°F (190°C). Line or grease muffin tin.
2️⃣ Melt butter in a skillet. Add apples + sugar, sauté until soft & mushy (5–7 min). Mash slightly, let cool.
3️⃣ Whisk dry ingredients (flour, sugar, baking powder, cinnamon, salt).
4️⃣ Whisk wet ingredients (eggs, oil, milk, vanilla). Stir in apple mush.
5️⃣ Combine wet + dry until just mixed.
6️⃣ Fill muffin cups ¾ full, sprinkle topping.
7️⃣ Bake 18–22 min until toothpick comes out clean.
8️⃣ Cool 5 min & enjoy warm!
