... Read moreThere's nothing quite like a hearty, homemade meal that brings everyone to the table, and this smothered chicken and gravy plate with rice and green beans is a true winner in my book! I remember craving something truly comforting, and this recipe absolutely hit the spot. It’s perfect for busy weeknights when you want maximum flavor with minimal fuss, making it a staple in my rotation. Using the crockpot for the chicken is a game-changer for tenderness! To get that perfectly succulent, shreddable chicken, make sure not to overcook it. Six hours on low is usually ideal, but if your chicken breasts are on the smaller side, you might want to check a bit earlier. A pro tip I picked up: don't skip using a hand mixer to shred the chicken right in the crockpot at the end! It makes the chicken wonderfully flaky and ensures every piece is evenly coated in that delicious gravy. For an extra layer of flavor, sometimes I'll quickly sear the chicken breasts in a hot pan before adding them to the crockpot – it helps lock in juices and adds a nice golden color, though it's totally optional for this easy recipe. Now, let's talk about those smothered green beans mixed with bacon! They are an absolute star of this plate. The key is really rendering down that turkey bacon until it's perfectly crispy, then letting the finely diced onions soften and become translucent in that flavorful fat. Don't be shy with the seasonings – that Nature seasoning, salt-free Toney's, and black pepper really elevate the dish. I've found that adding a pinch of garlic powder along with the fresh garlic can deepen the savory notes even more. If you're not a fan of turkey bacon, regular pork bacon works just as well, and you can even experiment with some diced ham for a different flavor profile. The tablespoon of flour creates that beautiful, thick gravy for the beans, making them incredibly satisfying and hearty. For the rice, following box instructions is usually straightforward, but a little secret for extra fluffy white rice is to rinse it thoroughly before cooking until the water runs clear. This removes excess starch, preventing sticky rice. Assembling the homemade chicken and rice with gravy plate is the best part! I love a generous scoop of the creamy chicken, a mound of fluffy white rice, and those irresistible green beans right next to it. This dish is truly a complete meal on its own, but if you're looking to round it out, a simple side salad with a light vinaigrette or some warm cornbread would be fantastic additions. It's the kind of meal that makes you feel instantly cozy and nourished, reminding you of the best home cooking. Want to switch things up? For the chicken, you could add some sliced mushrooms or a can of cream of mushroom soup for another layer of flavor in the crockpot. For the green beans, a splash of apple cider vinegar at the end brightens them up beautifully. This recipe is also fantastic for meal prepping! You can easily portion out individual servings for lunches throughout the week. The flavors often deepen overnight, making it even more delicious the next day. Trust me, once you try this comforting combo, it'll become a regular in your rotation!
