Located on the third floor of Fairmont Singapore, DOMO Modern Japanese is an innovative dining destination by Chef Rose Ang.

Moving away from traditional minimalist Japanese aesthetics, DOMO embraces a contemporary interior filled with dramatic lighting, flowing architectural textures, and warm organic elements.

One of the first features that caught my attention was the sculpted pastel-hued installations inspired by gentle ocean waves, paired with blue-lit curved panels resembling a cascading waterfall.

Dark tones dominate the main dining area, complemented by modern furnishings and an illuminated bonsai tree that serves as a striking focal point.

Facing the full-length windows is a brighter and more communal space, featuring a wall adorned with delicate pink and gold floral accents.

For guests seeking a more exclusive experience, the restaurant also offers three private dining rooms.

We tried their Signature Tasting Menu ($88++).

Salmon Tataki

Served with Dijon Mustard Miso and balsamic glaze. Beautifully plated, though I found the sauce slightly overpowering.

Tuna Sashimi Taco

Paired with avocado, Greek feta, and roasted tomato salsa. An enjoyable combination of textures and layered flavours.

Pork & Seafood Gyoza with Scallion Ponzu

The scallion ponzu worked well as an alternative to the usual ginger accompaniment.

Crispy Halibut with Yuzu Truffle Sauce

Presented tableside as the staff poured the sauce over the fish. Visually appealing and packed with flavour.

Robata Beef Tenderloin

Served with grilled asparagus, eggplant, and truffle teriyaki. The dish showcased how traditional Japanese robatayaki can be paired with refined modern presentation.

Truffle Mushroom Baked Rice

Fragrant, comforting, and full of flavour.

Honey & Mint Umeshu Macerated Strawberries with Mango Passionfruit Sorbet

Light, refreshing, and surprisingly well-balanced. Less sweet and tangy than most sorbets I've tried.
