Full transparency this is part of a campaign I’m doing with Wisconsin on a different app but I wanted to share this recipe here because it is yummy and it also took me like 6 hours to make so I need to show it to everyone that will watch!
Ingredients
Dough:
• 2¾ c all-purpose flour
• 1 c finely shredded cheddar (Renard’s Cherry Cheddar) @RenardsCheese
• 2 t sugar
• ¼ t salt
• 1 t ground cardamom
• 1 c cold butter, cubed
• 1 c ice water
• ¼ c apple cider vinegar
Filling:
• 36 oz cherry pie filling @LautenbachsOrchardCountry
Mascarpone Cream:
• 1½ c heavy cream
• 2 T sugar
• 1 t vanilla
• 8 oz mascarpone
Mix flour, cheddar, sugar, cardamom & salt. Cut in butter until pea-sized. Mix water & vinegar; add gradually until dough just comes together. Shape, wrap, and chill 1 hour. Roll, fold into thirds, rotate, and repeat 3 times. Divide into two disks; chill 2 hours or overnight.
Bring dough to room temp 30 min. Roll one disk into a 10 inch circle; place in 9 inch pie plate and fill. Roll second disk, cut into strips, and weave lattice. Trim and crimp edges; chill 30 min.
Bake at 400 F for 20 min reduce to 350 F, sprinkle with cheddar, and bake for 30-35 min until bubbly and golden.
Mascarpone Cream
Whip cream with sugar & vanilla to stiff peaks. Beat mascarpone until smooth; fold together. Chill.
Serve pie with mascarpone whipped cream
