Victoria Sponge

For the whipped cream:

Heavy whipping cream

11% powdered sugar by weight

For the cakes:

3 eggs whisked

190g good quality butter

190g caster sugar

190g self raising flour

1tsp baking powder

3Tbsp milk

Strawberry vanilla jam (see previous video)

-Preheat oven to 350f

-Grease and line 2x 21cm cake pans

-Beat sugar and butter until fluffy

-Whisk in eggs a little at a time

-Add flour, baking powder and fold in.

-Add milk until the batter falls off the spoon

-Divide batter evenly between cake tins

-Bake for 23-30 minutes until a toothpick comes out clean

-Do not assemble until cakes are completely cooled
