1 red onion diced

4 cloves garlic minced

3Tbsp tomato paste

1 cup dry red wine

2 cups beef stock

2.5 cups tomato puree

1Tbsp sugar

1 large cinnamon stick

3 bay leaves

1/4tsp ground clove

1.5tsp dry oregano

Salt & Pepper to taste

For the béchamel:

100g butter

3/4 cup flour

4 cups milk

1tsp ground nutmeg

2tsp salt

4oz graviera cheese grated

2 eggs separated

-Make sauce and bechamel as seen

-Cook pasta, toss in whipped egg whites

-Layer in oven safe dish

-Top with sauce, then bechamel

-Grate more cheese over the top

-Bake at 350f for ~45 minutes until golden

-Let rest for 30 minutes before cutting
