FOS w/ Braised Short Rib

2lbs boneless short rib, or other braising cut

12cups @kettleandfire Beef Bone Broth

5 yellow onions sliced

6Tbsp unsalted butter

1 bunch fresh thyme

5 bay leaves

1Tbsp whole black pepper

8oz dry white wine

4oz cognac

Crusty bread & Gruyère to top

-Season beef heavily with salt and pepper on all sides

-Sear until browned all over in a large pot.

-Add bone broth until covered. Bring to a light simmer on the stove then cover with lid

-Braise beef at 350f for 2.5 hours

-While beef is braising caramelized onions in butter until nicely browned and aromatic, this should take at least 2 hours

-Remove cooked beef, save bone broth

-Deglaze onion pan with cognac and wine, cook until 80% reduced

-Strain bone broth into the onions, add thyme, pepper & bay

-Season with 1/2Tbsp salt 1/4tsp black pepper

-Simmer semi covered for 2 hours

-Remove aromatics, add shredded beef

-Pour into oven safe bowl, top with bread and lots of cheese. Bake at high heat until melted and browning all over.
