For the jus:
375ml Madeira
1 shallot finely diced
125ml Demi glacé mixed with 325ml beef stock
-Combine Madeira and shallot, simmer until reduced by 80%
-Combine Demi glace and stock, bring to the boil
-Add stock to Madeira, reduce until desired thickness
-Cook filet to desired temperature, while it rests sear the foie and cook the brioche in the fat
-Serve filet over the crouton with the foie, strain the sauce and pour over
-Finish with shaved black truffle
-Enjoy
