Chicken Francese

2 chicken breasts sliced into 3 pieces

1 cup AP flour mixed with 1Tbsp salt & 1tsp Black pepper

3 eggs whisked

EVOO for frying

2/3 cup white wine

1.5 cups chicken stock

Juice 2 lemons

3Tbsp butter cubed & coated in 1.5Tbsp AP flour

Chopped parsley

Lemon slices for garnish

-Pound chicken breasts

-Coat in egg, then into flour. Wait 3 minutes then straight into a good amount of EVOO over medium heat

-Cook chicken on both sides until golden brown, remove from pan

-Wipe out excess frying oil

-Add white wine, simmer for 5 minutes

-Add chicken stock and reduce by 1/4

-Add lemon, simmer for 5 minutes

-Add coated butter and whisk until completely emulsified

-Reduce to desired consistency

-Season with salt to taste

-Add parsley and chicken, coat with sauce

-Simmer 5 minutes. Serve on lemon slices and with pasta if desired

-Enjoy
