Maple Cinnamon Sweet Potato Casserole
For the pork:
4lbs boneless pork butt/shoulder
2 carrots
3 stalks celery
1 yellow onion
4 cloves garlic
4 rosemary sprigs
1.5 cups red wine
Chicken stock to cover
3Tbsp AP flour
S&P
Neutral oil for searing
-Season pork heavily with salt and pepper
-Sear pork heavily on all sides over medium/high heat
-Remove pork, add vegetables and saute for 5 minutes
-Add flour and cook 2 more minutes
-Add wine, stir while cooking over medium heat until thickened
-Add pork, rosemary, and chicken stock until just covered
-Bring to simmer. Place lid on pot and cook in oven at 325f for 2.5 hours
For the potatoes:
5 large sweet potatoes
5oz @churnfoods cinnamon maples butter
-Prick potatoes all over with a fork
-Bake at 400f for 1 hr or until very tender
-Puree potatoes, season, add butter
-Once pork is cooked, shred well
-Layer pork then potatoes
-Broil for 20 minutes
-Brush with additional butter and finish with chives
-Enjoy
