2 cucharadas mostaza dijon
1/4 taza vinagre de manzana
2 cucharadas vinagre balsámico
2 ajos finamente picados
1 echalote finamente picado
Sal y Pimienta al gusto
1/2 taza aceite de oliva extra virgen
4 puños kale/col rizada
1/2 butternut squash
1 manzana gala
1/4 taza nuez pecana picada
1 taza dátil con chile @datilesdellapalma
Rostizar la calabaza en cubos sazonada con aceite de oliva, sal, pimienta y paprika en polvo al gusto. Hornear a 400F por 15-20 minutos.
Mezclar todos los ingredientes de la vinagreta hasta emulsificas.
Masajear el kale con un poco de aceite y agregar el aderezo. Mezclar y agregar la calabaza rostizada, la nuez, la manzana en rebanadas delgadas y los dátiles con chile @datilesdellapalma en trozos.
