1/2 tsp red pepper flakes (optional, for a little heat)
Salt and black pepper to taste
1 tbsp balsamic vinegar
1/4 cup chicken or vegetable broth (optional, for extra juiciness)
Instructions:
Trim off the ends and remove any yellow outer leaves. Slice them in half.
In a large skillet over medium heat, add 1 tbsp olive oil. Add the sliced kielbasa and cook until lightly browned, about 3-4 minutes per side. Remove from the skillet and set aside.
In the same skillet, add the remaining 1 tbsp olive oil. Add the Brussels sprouts cut-side down. Let them sear undisturbed for 5-6 minutes until golden brown.
Toss the garlic and red pepper flakes into the sprouts and sauté for 1 minute. Add salt and pepper to taste.
Return the kielbasa to the skillet. Add the vinegar and broth (if using) and stir to coat everything. Cover and let cook for another 3-4 minutes until Brussels sprouts are tender but still slightly crisp.
Taste and adjust seasoning if needed. Serve warm as a main dish or a hearty side.

Using smoked kielbasa adds a rich, smoky depth to the meal, pairing wonderfully with the slightly bitter and nutty flavor of seared Brussels sprouts. The method of cooking the sprouts cut-side down allows them to caramelize beautifully, adding a crispy texture that contrasts nicely with the tender meat.
Adding garlic and a touch of red pepper flakes not only enhances the flavor profile but also introduces a subtle aromatic heat that can be adjusted to your preference. The inclusion of balsamic vinegar provides a pleasant acidity that balances the richness of the kielbasa and the earthiness of the sprouts. Meanwhile, splash of chicken or vegetable broth adds moisture, ensuring the sprouts are tender without being soggy.
For those interested in nutritional benefits, Brussels sprouts are high in vitamins C and K, as well as fiber, making this dish both satisfying and healthy. The kielbasa contributes protein but should be enjoyed in moderation due to its sodium content. To keep things light, serving this dish with a fresh salad or roasted vegetables is a great option.
