Ingredients 🛒

•1 c chopped carrots

•1 c chopped onions

•1 c chopped celery stalks

•1/4 c chopped celery leaves

•2 c chopped kale

•1/3 c chopped garlic

•1/2 c chopped tomatoes

•32oz vegetable broth (4 c)

•3 c water

•2 lemons juiced

•1 can white beans (15.8oz)

•1 tsp sea salt

•1/2 tsp ground black pepper

•1/4 tsp crushed red pepper flakes

•1 tsp ground turmeric

•4 sprigs fresh thyme

•1 bay leaf

•1/4 c fresh chopped dill

•1/4 c fresh chopped cilantro

•1/4 c fresh chopped Italian parsley

•1/4 c Locatelli Pecorino Romano cheese

•2 tbsp extra virgin olive oil (EVOO)

•1/4 c tahini

Step by step instructions 🍋

🫒 Start by grabbing dutch oven or large pot & place on burner at a medium high heat. Wait 30secs, add in 2 tbsp EVOO let sit 1min.

🥕 Then turn burner down to medium heat & add in 1 c chopped onion, 1 c chopped carrot & 1 c chopped celery stalks. Stir & let cook for 5mins.

🍅 Next, add in 1/3 c chopped garlic & 1/2 c chopped tomatoes, stir & cook for 1min.

🍋 Add 32oz vegetable broth, 3 c water, 1 can white beans (drained & rinsed), 2 lemons juiced, 1 tsp ground turmeric, 1 tsp sea salt, 1/2 tsp ground black pepper, 1/4 tsp crushed red pepper flakes, 1/4 c chopped celery leaves, 1 bay leaf & 4 sprigs fresh thyme. Turn to medium high heat. Bring to a boil, turn burner to medium low heat, cover & cook for 37mins.

🌱 Lastly, add in 1/4 c fresh chopped dill, 1/4 c fresh chopped cilantro, 1/4 c fresh chopped Italian parsley 2 c chopped kale, 1/4 c tahini & 1/4 c Locatelli Pecorino Romano cheese & cook for another 3mins uncovered.
