Ingredients for tabbouleh 7 servings 🛒

•1 c bulgar/cracked wheat

•1 bunch finely chopped green onions

•2 bunches finely chopped curly parsley

•1/2 bunch finely chopped mint

•3 large tomatoes diced

•Juice of 4 lemons

•1/2 c extra virgin olive oil

•1/2 tsp ground black pepper

•1/2 tsp sea salt

Step by step instructions 👇🏽

🧼 A good meal starts with cleanliness so wash your hands up good!

💧Next pour 1 c bulgar/cracked wheat into a bowl of 2 c cold water & let sit for 20 mins. Set aside.

🍅 While the bulgar is soaking, dice up 3 large tomatoes, 1 bunch green onions, 2 bunches curly parsley, 1/2 bunch mint & juice 4 lemons.

🍋 Grab a large mixing bowl, add in tomatoes, green onions, curly parsley, mint, lemon juice, 1/2 c extra virgin olive oil, 1/2 tsp ground black pepper & 1/2 tsp sea salt. Mix ingredients together thoroughly.

🥣 Now let’s remove the water from the bulgar. Grab a medium size bowl, a dish towel & the soaking bulgar. Lay the dish towel flat on your counter bc you’ll be pouring the bulgar directly into it to squeeze out the moisture BUT NOT YET!!

🧻 Grab the bowl of soaking bulgar, head over to your kitchen sink, cover the bulgar with your hand & begin pouring out the water. Remove as much water as possible & then pour the bulgar onto the middle of your dish towel.

💧 Use your hands to carefully & tightly close the dish towel so the bulgar has its own little pouch. (Check video out again for the visual to see how i squeeze out the access moisture from the bulgar).

🥶 Squeeze dish towel w/the bulgar directly over the medium bowl to remove as much moisture as possible. Once moisture is removed add the bulgar to the bowl of herbs & veggies. Mix thoroughly & refrigerate for 1-2 hours before serving so the flavors can marry together.

🍽️ Serve with baked kibbeh burgers (recipe below) 👇🏽

Ingredients for baked kibbeh burgers 🍔

• 1 lb ground lamb

•1/2 c pine nuts

•1 tsp sea salt

•1/2 tsp ground black pepper

•1 c diced onion

•3/4 c bulgar/cracked wheat

•1 tbsp melted butter

Step by step instructions 👇🏽

💧 Start by soaking 3/4 c bulgar in a bowl of 1 1/2 c water & let sit for 20 mins.

⏰ After the bulgar has soaked for 20 mins, follow the same instructions i listed above for removing the water from the bulgar.

🔥 Preheat oven to 350*F.

🥣 Once the water has been completely removed from the bulgar, in a large bowl add 1 lb ground lamb, 1 tbsp melted butter, 1/2 c pine nuts, 1 tsp sea salt, 1/2 tsp ground black pepper, bulgar & 1 c diced onion.

👋🏽 Wash your hands & then mix the meat mixture with your hands until it’s completely incorporated together.

🍔 Next, form small burger patties with your hands that are 3/4 inch thick & 3 inches wide.

☑️ Line a baking sheet with aluminum foil & drizzle a little olive oil on the pan to avoid the burgers from sticking.

📏 Place burger patties on the baking sheet at least 2 inches from each other.

⏰ Bake patties at 350*F for about 12 mins then flip patties & bake for another 13 mins.

✨Remove from oven & start plating up your delish meal w/kibbeh burgers, tabbouleh salad, Sabra hummus w/extra virgin olive oil drizzled on top, pita bread & dried apricots 😋
