•8 zucchini flowers (stems + pistels removed)
•1/4 tsp baking powder
•1/3 c AP flour
•1 tsp 2% milk
•1/3 c sparkling water
•2 pinches sea salt
•1 pinch black pepper
•1 pinch garlic power
•1 pinch onion power
•1 pinch cayenne pepper
•Olive oil for frying
Step by step instructions ✨
💧Start by filling a medium bowl w/cold water. Next, gently & carefully remove stems & pistels from flowers. Then gently split flower petal in half w/your hands. Repeat until all petals are halved.
🌼Submerge your halved petals into cold water making sure water covers them completely. Then grab each petal & use your fingers to gently remove orange pollen & dirt.
🧻 Place on a paper towel lined baking sheet & let dry for 20mins. Then gently turn petals over to the other side & let dry for another 20mins.
🧂While you’re waiting for the petals to dry, add to a medium bowl 1/3 c AP flour, 1/4 tsp baking powder, 2 pinches sea salt, 1 pinch black pepper, 1 pinch garlic power, 1 pinch onion power, 1 pinch cayenne pepper, 1 tsp 2% milk & a little sparkling water at a time (1/3 c sparkling water total).
🌪️Whisk together until mixture thickens to a batter. Let batter sit while petals dry.
🫒Next, line a baking sheet w/paper towel. This is where you will place your cooked zucchini flowers after cooking in order to remove excess oil.
🔥Once the petals are dried, place a deep frying pan on medium high heat. Let heat up for 1min then cover the pan bottom w/olive oil. Let oil heat up for 2-3mins.
‼️Dip the zucchini flowers into the batter, ensuring it’s completely coated w/batter.
🫒Gently place battered zucchini flowers into the hot oil AWAY from you (to avoid oil splashing towards you).
⏰Cook for about 20-30secs on one side & then flip & cook for another 20-30secs.
