Quinoa Salad!

Ingredients

- Quinoa (uncooked): 2 cups (16 oz)

- Chicken stock: 4 cups (32 oz)

- Diced tomatoes: 2 cups

- Diced cucumber: 2 cups

- Scallions: 1½ cups

- Black beans (rinsed): 1 cup

- Limes: zest and juice of 2

- Salt: 1 tablespoon

- Black pepper: 2 teaspoons

- Cumin: 2 teaspoons

- Chili powder: 2 teaspoons

- Paprika: 1 tablespoon

- Honey: 1 tablespoon

- Extra virgin olive oil: 2 tablespoons

Instructions

1. Add quinoa and chicken stock to a medium saucepan and bring to a boil over medium-high heat.

2. Reduce heat to medium-low and simmer 5–8 minutes until liquid is fully absorbed.

3. Turn off heat, cover, and let rest for 5 minutes.

4. Transfer quinoa to a bowl or sheet pan and cool completely to room temperature.

5. Prepare vegetables, rinse beans, zest and juice limes.

6. Combine all ingredients and mix thoroughly.

7. Serve immediately or chill for best flavor.
