Ingredients:
2 - 2lb turkey legs
4 cups water
¼ cup kosher salt
¼ cup brown sugar
2 tsp pink curing salt (Prague Powder #1)
1 tbsp smoked paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tsp black pepper
1 tsp allspice
½ tsp cayenne
1/2 seasoning of choice
Smoking wood chips
Directions:
Bring 2 cups of the water to a simmer.
Add the kosher salt, brown sugar, pink curing salt, and spices. Stir until dissolved.
Add the remaining 2 cups cold ice water to cool it down.
Let the brine chill until completely cold.
Submerge turkey legs fully in the brine.
Refrigerate 24 hours
Pat very dry after brining and sprinkle on additional seasoning of choice.
Smoke at 250°F for 2.5 hours or until the internal reaches 180°.
