Ingredients

4 large egg whites, room temperature

1 ¼ cups sugar

2 teaspoons cornstrach

1 teaspoon white vinegar

1.5 cups heavy cream + 2 Tbsp sugar

2 cups berries of choice

Mint leaves for garnish

Directions

Add 4 egg whites to a table top mixer and whisk until you have soft peaks. Slowly add in you sugar 1 Tbsp at a time while whisking on medium high speed until fully incorporated. Add cornstarch and vinegar and whisk 1-2 more minutes until you have stiff peaks.

Lay parchment paper down and trace out your presentation platter. Use a cup or small bowl to help guide where you’re going to place the meringue dollops.

Flip the parchment paper over on a baking sheet. Add dollops of your meringue over your traced marking to resemble the shape of a wreath. Bake in a 250° oven for one hour and 15 minutes, shut the heat off and leave in until fully cooled (about 3 hours). Make sure not to open the door until it has fully cooled.

Transfer to your presentation platter.

Make whipped cream by whisking cream and sugar until you have stiff peaks.

Spread on whipped cream, top with fresh berries, and add fresh mint leaves for an extra pop of color.

Enjoy!

... Read moreThe Christmas Wreath Pavlova is a show-stopping dessert that combines the delicate textures of crisp meringue with a soft, marshmallow-like interior, making it an ideal choice for the holiday season. One key tip for achieving the perfect pavlova texture is to ensure that the egg whites are at room temperature before whisking; this allows them to whip to maximum volume and stability. While whisking, it's important to add the sugar gradually, one tablespoon at a time, to help the sugar fully dissolve and support a glossy meringue. The addition of cornstarch and white vinegar plays a crucial role in achieving that classic pavlova consistency — the cornstarch stabilizes the meringue interior, while the vinegar adds a subtle tang and helps the structure maintain its form. Baking the meringue at a low temperature (250°F) for over an hour and letting it cool gradually inside the oven prevents cracks and ensures a perfect crunch on the outside. When it comes to garnishing, freshly whipped cream sweetened lightly with sugar brings a creamy contrast to the crisp meringue. Topping the wreath with fresh berries not only adds vibrant color but also introduces a refreshing tartness that balances the sweetness. Mint leaves provide a festive aromatic touch, enhancing the holiday experience visually and with a subtle herbal note. This recipe is highly versatile—feel free to experiment with different berries such as raspberries, blueberries, or sliced strawberries based on your preference or seasonal availability. You can also try adding a drizzle of berry coulis or even a light dusting of powdered sugar for an extra festive flair. Serving Pavlova immediately after assembling prevents the meringue from becoming soggy. If preparing in advance, store the baked meringue base in an airtight container and add the whipped cream and berries just before serving for maximum freshness. Overall, this Christmas Wreath Pavlova offers a light, elegant alternative to heavier holiday desserts, perfect for those looking to finish their meal on a sweet yet refreshing note. It's sure to impress family and guests with its beautiful presentation and delightful balance of textures and flavors.
