Instructions:

* Make the filling: In a large bowl, combine ground pork, chopped chives, soy sauce, sesame oil, salt, and pepper. Mix well until combined.

* Assemble the dumplings: Place a dumpling wrapper on a clean surface. Place a spoonful of filling in the center of the wrapper. Fold the bottom of the wrapper over the filling, then fold the sides together to seal. Crimp the edges to secure.

* Cook the dumplings: You can cook these dumplings in boiling water, pan-fry them, or steam them. For boiling, cook until they float to the surface. For pan-frying, cook until golden brown on one side, then add a splash of water and cover until the water evaporates. For steaming, steam until cooked through.
