🥖I’ve known about this home bakery for quite a while now but somehow never got my hands on any of their baked goods! honestly not sure why 🤔
BUT thankfully that changed this weekend and I got to try pastries and cake from 📍Capitol Jill Baking, a neighborhood microbakery specializing in naturally leavened bread, pastries, and modern cakes & flavors inspired by the seasons and the owner Jill's upbringing in Hanoi, Vietnam 🇻🇳
🥖Jill does menu drops every Sunday via hotplate and she rotates flavors frequently. You will have to be quick because she gets SOLD OUT almost every time because her stuff is that good!
Here’s what I tried:
🥭Mango Lassi Donut
🥐 Traditional Swedish Cardamom Bun
🍰 Rhubarb Earl Grey Cake Slice
🥒 Dijon Mustard & Dill Pickle Biscuit
💯Honestly everything was so good and the fact that these all came out from a home bakery is INSANE cause everything tasted better than most baked goods I’ve had from commercial bakeries and the quality was TOP TIER. Jill was also featured on Washingtonian Magazine on a recent article on dc-area bakers! I can’t wait to try her sourdough bread next 😮💨

When I searched for 'Capitol Hill bakery,' I was looking for something special, and this place truly delivers far beyond what you'd expect from a typical shop down the street. It’s not just another spot; it’s a passionate home bakery run by Jill, whose creations are deeply inspired by her upbringing in Hanoi, Vietnam, and the changing seasons. This unique blend really sets her apart in the bustling DC food scene.
One of the biggest draws for me is the quality. The fact that everything is baked out of a home kitchen might make you think "small scale," but the flavors and execution are seriously professional, even better than some commercial bakeries I've tried. Take the Swedish Cardamom Bun—it's buttery, fragrant, and perfectly spiced, a genuine 10/10 in my book. And if you're feeling adventurous, the Dijon Mustard & Dill Pickle Biscuit is an absolute revelation. Who knew those flavors could work so beautifully together in a biscuit? It's unexpected but incredibly delicious, a true testament to Jill's creativity.
Of course, I can't forget the sweeter side. The Mango Lassi Donut is a light, fluffy dream, filled with that bright, tangy mango flavor. It’s hard to imagine a more perfect donut to brighten your day. And for something a bit more elegant, the Rhubarb Earl Grey Cake Slice is perfectly spongy and not overly sweet, with a wonderfully balanced flavor profile that makes you savor every bite. The artistry in each cake slice is evident, layers of delicate sponge and cream.
Now, for some practical advice if you want to get your hands on these incredible treats. Because Capitol Jill Baking is a microbakery, and Jill's creations are so popular, they tend to sell out incredibly fast. This is where the 'waitlist' and 'online menu drops' come into play. Her menu drops happen every Sunday, and you really need to be quick if you want to snag your favorites for pre-orders. I’ve learned the hard way that hesitation means missing out! It truly adds to the excitement, though—it feels like hunting for a hidden treasure, and when you finally get your scone, donut, or cake slice, it's so much more rewarding.
So, if you're searching for a 'Capitol Hill bakery' that offers something truly exceptional, supports a local artisan, and delivers top-tier, unique baked goods, make sure Capitol Jill Baking is at the very top of your list. Keep an eye on her Sunday drops and prepare for a delightful experience that goes beyond your average baked goods.
