Laksa Prawn Otah! 😍✨

Presenting ‘Otah Otak’🦐🍍

Laksa Prawn Otak with Caramelised Pineapple, Ikura, and Chervil.

*Inspiration*

It’s been a little over a month since my last video. I’ve been kept busy with orders, finding a shop space for my flagship store, while also taking time to take care and grieve the loss of my beloved dog of 17 years. Thanks to some of you for personally sending me a message to check if I am ok. 🙏

This dish is inspired by a high tea treat from Fullerton Hotel Singapore, where prawn otah and pineapple came together beautifully, a pairing I absolutely love.

On a brighter note, I’ve welcomed a new puppy into the family! Meet Yum Cha 🐶💛

Otah, traditionally a spiced fish cake wrapped and grilled, gets a vibrant twist here with fresh prawns and the unexpected sweetness of caramelised pineapple. This contrast creates a balance of savory and sweet that’s truly irresistible. To enhance the dish, consider using fresh prawns and deveining them properly to ensure the best texture and taste — a simple step that elevates the final result. The ikura adds a burst of briny flavor and an elegant touch, while chervil’s delicate herbal notes brighten the palate. If you're curious about the otah paste used, homemade versions allow you to control the spice and ingredients to adapt to your own flavor preferences. There are plenty of recipes that guide you through making otah paste from scratch using spices, coconut milk, and fish, but for convenience, store-bought pastes also work well. Serving the Laksa Prawn Otah as part of a high tea setup or as an appetizer makes for an impressive presentation and a flavorful experience. Pair it with a light salad or some traditional kaya toast for a delightful fusion meal. I recently tried this recipe after discovering it was a popular offering at a renowned Singapore hotel, and it did not disappoint. The combination of flavors was harmonious and refreshing, making it my new favorite dish to share with friends and family. Don't forget to garnish with fresh herbs like chervil to elevate the aroma and appearance. Experimenting with this recipe can also lead you to other iconic dishes such as prawn laksa noodles or nyonya-style pineapple prawn recipes, further exploring the exciting world of Singaporean and Malaysian cuisine at home.
