Here’s how I made it:
CAJUN RICE SKILLET
• 1 cup rice
• 2 cups beef broth
• 1 andouille sausage (casing removed + finely chopped)
• ½ lb ground beef
• ½ onion, diced
• ½ bell pepper, diced
• 2 cloves garlic, minced
• Cajun seasoning
• Garlic & Onion powder
• Smoked paprika
• Thyme
• Black pepper
• Splash Worcestershire
• Green onions to finish
Cook rice in beef broth and set aside.
Brown the chopped andouille first, then add the ground beef.
Once browned, add onion and bell pepper and cook until soft.
Stir in garlic and seasonings.
Fold in the cooked rice and mix everything together.
Finish with sliced green onions.

Cook in a hot cast iron skillet 3–4 minutes per side until a nice crust forms.

• 1 tbsp butter
• 1 clove garlic
• ½ cup heavy cream
• 1–2 tsp Cajun seasoning
• Splash Worcestershire
• Pinch smoked paprika
Melt butter, sauté garlic, add cream and seasoning.
Let it simmer until slightly thickened, then spoon over the fish.
