Mediterranean Wraps
Delicious 😋 homemade Mediterranean Omelette wraps/ burritos 🌯.
Ingredients:
3-4 eggs
Salt and pepper
1/2 Roasted red bell peppers
1/2 Onion 🧅
1 clove garlic 🧄
1/4 cup of roasted eggplant.
Tortillas
Cheese 🧀 of your choice
Sauté the vegetables in a pan with unsalted butter 🧈 and season with salt and pepper to taste. Beat the eggs and add them. Cook until fluffy, warm up your tortillas. Add cheese 🧀 I used Swiss cheese and then the omelette. Wrap them up in the tortillas and place them on your pan and toast them until golden brown.
