Elevated Tortilla Española

Ingredients:

10 eggs

2 Zucchini

5 potatoes 🥔 peeled and cut into small pieces

2 big portobello 🍄‍🟫 mushrooms 🍄‍🟫

10-15 cherry tomatoes 🍅

1-2 cloves of garlic 🧄

Shredded cheese 🧀 of your choice (you can add as much or as little depends how much you like cheese)

Salt and pepper to taste

Steps:

Boil the potatoes 🥔 until they are almost cooked. Spray your tray with cooking spray and pour the potatoes after they have been drained.

Sauté the tomatoes 🍅, zucchini, garlic 🧄, mushrooms 🍄‍🟫 all together with some olive 🫒 oil until they are cooked but still firm. Once this step is done add with the potatoes 🥔. Beat your eggs and season them and pour all over the potatoes and vegetables. Cover the top with the shredded cheese 🧀. Bake at 375 degrees Fahrenheit for 1 hour or until fully cooked and golden brown on the top. Let it cool for 10-15 minutes and serve with the side of toast.
