Crispy-Creamy Ranch Chicken w/ dill pickle slaw

Back at it again with one of my favorite low cal/high protein meals. Here's the recipe. (6 servings)

Main dish:

2 lb boneless, skinless chicken breasts

1/2 tsp salt

1/2 tsp pepper

2 Tbsp olive oil

1 cup panko breadcrumbs

1 (1-oz) envelope Ranch dressing mix, divided

6 oz 1/3 less fat cream cheese, softened

3 Tbsp reduced fat milk or buttermilk

3 green onions, sliced and divided

Instructions:

Preheat broiler. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side. Transfer chicken to a greased 13 x 9-inch baking dish.

Meanwhile, toss together breadcrumbs and 1 Tbsp Ranch mix. Stir together cream cheese, milk, remaining Ranch mix, and 2 sliced green onions.

Spread cream cheese mixture over chicken; sprinkle with breadcrumb mixture. Broil 3 minutes or until breadcrumbs are toasted. Sprinkle with 1 sliced green onion.

Side Dish Ingredients:

1(16-oz) pkg tricolor coleslaw

1/2 cup dill pickle relish

1/4 cup mayonnaise

3 Tbsp white wine vinegar

2 Tbsp chopped fresh dill

1 tsp granulated sugar

Side Dish Instructions:

Toss together all ingredients in a large bowl. Cover and refrigerate up to 1 hour before serving.
