Tried the famous Ichiran Ramen Taipei Flagship Store and I finally get why everyone is obsessed 👀

The broth = SUPER UMAMI 🤯

Rich, deep, flavourful but not too jelak… I literally finished everything 🥹

I ordered my noodles EXTRA FIRM and omg…

That chewy texture + the thick broth = 💯 combo

✨ What makes it special:

* Solo dining booths (introvert heaven 🤫)

* Fully customizable ramen (spice, garlic, richness)

* Consistent quality every bowl

⏱️ Queue update:

Went on a weekday + 3pm → waited about 30 mins only (quite okay already!)

Weekends I ever queued about 1.5 hours before 😅

💡 Pro tip:

Go earlier or odd hours if you don’t want to queue too long

⭐️ Verdict: 5/5

Touristy? Yes. But still REALLY GOOD. Will come back again.

Ordering my noodles extra firm gave them a wonderfully chewy texture that paired excellently with the rich, umami-packed broth. The balance of flavors is impressive—deep and intense but not overwhelming, which kept me finishing every drop. If you plan to visit, timing is key. Weekdays around mid-afternoon are ideal to avoid long waits, which on weekends can reach up to 1.5 hours. For the best experience without the crowd, heading there during off-peak hours is a smart strategy. The attention to consistency also impressed me—every bowl maintained high quality, which is sometimes challenging with popular tourist spots. Although it attracts many visitors, the authentic Japanese ramen experience in Taipei feels both genuine and rewarding. In summary, if you're in Taipei and craving ramen, Ichiran offers more than just food—it delivers an immersive dining journey marked by flavor, customization, and atmosphere.
