No Knead Rosemary Parmesan Skillet Bread

Ingredients:

2 1/4 teaspoons (1 package) instant yeast

2 cups lukewarm water

4 1/2 cups all-purpose flour

2 tablespoons chopped fresh rosemary, plus more for sprinkling

1 1/2 teaspoons fine salt

3 tablespoons olive oil, divided

1/4 cup grated Parmesan cheese

Instructions:

In a large mixing bowl, dissolve the yeast in lukewarm water. Stir in half of the flour with a wooden spoon until combined. Add rosemary, salt, and the remaining flour, mixing until a sticky dough forms.

Cover the bowl with plastic wrap and let the dough rise in a warm place until doubled in size, about 1 hour. Alternatively, let the dough rise directly in the skillet as described in the next step.

Brush 2 tablespoons of olive oil over the bottom of a 10 or 12-inch cast iron skillet. Lightly flour your hands and sprinkle some flour over the dough. Shape it into a rough disk and place it in the prepared skillet. Cover loosely and let rise until puffy, about 30 minutes.

While the dough is rising, preheat the oven to 400°F.

Drizzle the remaining olive oil over the dough. Use a sharp knife to score an “X” on top, then sprinkle additional rosemary over the surface.

Bake for 20 minutes, remove from the oven, and sprinkle with Parmesan cheese. Return to the oven and bake for another 20 minutes, or until golden brown and the cheese is melted.

Let cool slightly before slicing and serving.
