CHILI MACK AND CHEESE
Ingredients:
1 tbsp olive oil
2 garlic cloves, minced
1 onion, finely chopped
1 red bell pepper, chopped
1 lb ground beef (lean preferred)
28 oz crushed canned tomato
14 oz can red kidney beans, drained
2 1/2 cups beef broth (chicken broth works too)
8 oz elbow macaroni pasta, uncooked
2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
1/4 cup cilantro, finely chopped (optional, for garnish)
Spices (Homemade Chili Powder):
1 tsp cayenne pepper or chili powder (adjust to taste)
2 tsp paprika
2 tsp cumin
1 1/2 tsp onion powder (or garlic powder)
1 tsp dried oregano
1/2 tsp black pepper
1 1/4 tsp salt
Instructions:
Heat olive oil in a large pot over medium-high heat. Add the minced garlic and chopped onion, cooking for 1-2 minutes until fragrant. Add the bell pepper and sauté until the onion becomes translucent.
Add the ground beef to the pot, breaking it apart with a wooden spoon as it cooks. Stir occasionally until the beef browns evenly.
Once the beef is browned, add the crushed tomatoes, kidney beans, broth, macaroni, and all the spices. Stir everything together and bring it to a simmer.
Reduce the heat to medium, cover the pot, and cook for about 12 minutes, stirring occasionally, until the macaroni is cooked al dente and the mixture is saucy (but not overly liquid).
Turn off the heat but keep the pot on the stove. Stir in half of the shredded cheese until melted and creamy. Adjust seasoning with additional salt and pepper if needed.
Sprinkle the remaining cheese over the top, cover the pot, and let it sit for 2 minutes to allow the cheese to melt and the sauce to thicken slightly.
Garnish with cilantro, if desired, and serve immediately.
