If you’re exploring gluten-free baking, this Cherry Almond Biscotti is a fantastic recipe to add to your collection. Using cassava flour as a base helps create a crisp texture similar to traditional biscotti, while almond flour enriches the flavor and adds moisture. Baking powder and a touch of salt balance the sweetness of the sugar and dried cherries. When preparing the dough, creaming the butter and sugar until light and fluffy is key to achieving a tender crumb. Incorporating the almond and vanilla extracts infuses the biscotti with a warm, fragrant aroma. Chopped almonds and dried cherries bring delightful texture contrasts and a burst of sweetness in every bite. After chilling the dough, shaping it into logs and baking twice — first to set the shape and then sliced and baked again — guarantees the characteristic crunchiness of biscotti. The sprinkling of sugar on top enhances sweetness and adds a light crust. This recipe is especially perfect for anyone who wants to enjoy delicious baked treats without gluten, delivering a satisfying option for those with gluten sensitivities or celiac disease. Pair these biscotti with your favorite coffee, tea, or dessert wine for an elevated snack experience. For best results, make sure your ingredients are at room temperature and your oven is properly preheated. Store the biscotti in an airtight container to maintain their crunchiness. Experimenting with different add-ins like orange zest or dark chocolate chunks can also personalize this versatile recipe. This Cherry Almond Biscotti blends naturally sweet cherries and nutty almonds into a delightful gluten-free cookie that’s ideal for gift-giving, holiday celebrations, or everyday indulgence.
