Pumpkin Bread Pudding with Caramel Sauce

Pumpkin spice and everything nice…bread pudding drizzled with a creamy vanilla caramel sauce, delicious!

Pumpkin Bread Pudding with Caramel Sauce Recipe -

Ingredients:

15 oz pumpkin purée

2 cups milk

4 large eggs

1 cup granulated sugar

2 tsp pumpkin spice

1 tsp vanilla extract

5 cups cubed day-old bread

Easy Caramel Sauce

1/2 cup butter

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup heavy cream

1 tsp vanilla extract

Instructions:

Preheat oven to 350°F

Whisk together the pumpkin, milk, eggs, sugar, pumpkin spice and vanilla extract

Add the cubed bread and mix to coat

Let it sit 5 minutes to allow the bread to soak up the custard

Pour into a greased 9x13 baking dish

Bake 40-45 minutes, until it’s set and the top is golden brown.

Caramel Sauce:

Melt butter in a saucepan over med heat

Add sugars and cream, stirring until the sugar is dissolved

Bring to a gentle boil

Reduce heat and simmer 5 minutes, stirring often

Remove from heat and stir in vanilla

Serve bread pudding drizzled with warm caramel sauce
