Soft Potato Rolls Recipe -

Ingredients:

1/2 cup water

1/4 cup whole milk

2 1/4 tsp active dry yeast

3 tbsp sugar, divided

4 tbsp butter, melted

1 cup mashed potatoes, room temp

1 large egg

1 large egg yolk

1 1/2 tsp salt

4 cups all-purpose flour

Egg wash -

1 large egg

1 tsp water

Instructions:

Heat water and milk to a temperature between 105–110°F

Stir the yeast into the warm liquid with 1 tsp of sugar and let sit until foamy, 5-10 minutes

Add the remaining sugar, melted butter, leftover mashed potatoes, egg, egg yolk, salt, and about half of the flour

Mix until combined

Add remaining flour, as needed, until a sticky dough starts to form

Continue mixing on low-speed until dough is smooth, about 5 minutes

Place the dough in a lightly oiled bowl, turning it over to coat the surface with a thin layer of oil

Cover and let rise 1 - 2 hours, until doubled in size

Gently deflate and place dough on lightly floured surface

Divide into ten pieces and shape into balls

Place dough balls on baking sheet, cover and allow to rise about 30 minutes

Preheat oven to 375°F

Brush dough with egg wash and bake 12 minutes, until baked through and light golden brown

Cool on baking sheet
