Gingerbread spiced scones topped with cream cheese frosting and mini gingerbread people!

Gingerbread Scones

Ingredients:

Cream Cheese Frosting-

8 oz cream cheese, room temp

1/4 cup butter, room temp

1 1/2-2 cups powdered sugar

1 tsp vanilla bean paste

1 tsp gingerbread spice

Scones-

2 1/2 cups flour

1/2 tsp salt

1 tbsp baking powder

3 tbsp brown sugar

2 tsp gingerbread spice

1/2 cup butter, cold and grated

1/2 cup milk

1 egg

1/4 cup molasses

Instructions:

Cream Cheese Frosting-

Beat the cream cheese and butter until smooth and creamy

Add the powdered sugar, vanilla bean paste and gingerbread spice

Mix until combined and creamy

Refrigerate until ready to use

Scones-

Preheat oven to 400 F

Mix together flour, salt, baking powder, brown sugar and gingerbread spice

Cut in the butter until it resembles coarse crumbs

Add milk, egg and molasses

Stir to combine

Turn dough out onto floured surface and pat into a round about 1/2” thick

Cut into 8 pieces and place them in the cast iron skillet

Bake 15-18 minutes, until puffed and cooked through

Cool, then spread frosting over scones and top with mini gingerbread cookies
