Cranberry Christmas Cake 🎄

Rich, buttery cranberry cake! Sprinkled with powdered sugar and garnished with sugared cranberries…may all your Christmas wishes crumb true!

Cranberry Christmas Cake

Ingredients:

3 cups all-purpose flour

1/2 tsp baking powder

1/2 tsp salt

1 cup butter, softened

2 1/2 cups sugar

6 eggs

2 tsp vanilla extract

1 tsp almond extract

1 cup heavy cream

2 cups cranberries

Sliced almonds

Garnish-

Powdered sugar

Sugared cranberries

Fresh rosemary

Instructions:

Preheat oven to 350 F

Lightly oil the inside of your Dutch oven and place a parchment round in the bottom

Mix together flour, baking powder, salt and set aside

Cream together the butter and sugar until light and fluffy

Add eggs, one at a time, mixing after each addition

Add extracts and heavy cream and mix until combined

Mix in the flour mixture

Fold in the cranberries

Add batter to your Victoria Series Dutch Oven and top with sliced almonds

Cover and bake 65 - 75 minutes, until center is set and toothpick inserted comes out clean

Cool, sprinkle with powdered sugar and decorate with sugared cranberries and rosemary
