Ingredients:
2 tbsp olive oil
14 oz smoked sausage, sliced
1 cup chopped onion
2 bell peppers, chopped
3 cloves garlic, minced
Salt & pepper, to taste
1/2 tsp crushed red pepper
8 oz pasta of choice
3 cups chicken stock
15 oz can diced tomatoes
1 tbsp tomato paste
1/2 cup heavy cream
3 cups spinach
1/2 cup grated Parmesan cheese
6 oz cherry tomatoes
Parsley for garnish
Instructions:
Heat oil in pan over med-high heat
Add sausage and cook until browned
Remove sausage from pan and set aside
Add onion & bell pepper to pan and cook 3-4 minutes, until vegetables soften
Stir in garlic, salt & pepper and red pepper
Add dry pasta, chicken stock, diced tomatoes and tomato paste
Bring to a simmer, cover and cook about 10 minutes until pasta is cooked
Stir in heavy cream and spinach
Add the Parmesan, sausage and cherry tomatoes
Cook until warmed through
Serve sprinkled with parsley
