Hatch Green Chile Grilled Cheese -
Ingredients:
1/2 cup mayonnaise
Sandwich-
Butter
Sourdough bread
Pepper jack cheese, sliced
Hatch Green Chile Sausage, butterflied and pan fried
Cheddar cheese, shredded
Green chile mayo, from above
Instructions:
Green Chile Mayo-
Add mayonnaise and green chiles to food processor and blend until smooth
Sandwich-
Heat pan over medium heat and melt enough butter to coat the bottom of the pan
Place a slice of bread in the pan and layer with pepper jack cheese, browned sausage and cheddar cheese
Drizzle with green chile mayo and top with a second slice of bread
Cook until the bottom slice of bread is golden brown and crisp
Flip and cook until the other slice is golden and the cheese is melted
