Moist lemon cupcakes filled with tangy lemon curd and topped with creamy lemon mascarpone frosting…they’re the zest! 🍋

Triple Lemon Cupcakes 🧁

Ingredients:

Lemon Curd -

1/3 cup granulated sugar

Pinch of salt

3 egg yolks

1/4 cup lemon juice

3 tbsp butter

Mascarpone Frosting -

2/3 cups mascarpone, cold

1/3 cup powdered sugar

1/2 cup heavy cream, cold

2 tbsp lemon juice

Instructions:

Lemon Curd -

Whisk together the sugar, salt and egg yolks until pale yellow

Add lemon juice and stir to combine

Heat in a saucepan over low heat and cook until thickened and coats the back of a spoon

Remove from heat and stir in butter

Mascarpone Frosting -

Combine all ingredients in a large bowl

Whip until thick and creamy

I used a boxed lemon cake mix for the cupcake batter, use your favorite then fill with this delicious curd and top with frosting
